The sprigs that Taiping Houkui produces are larger in size and take longer to fully develop. Once the farmers return from the fields, they begin sorting the tea by plucking the oldest leaf on the sprig.

While the oldest leaves are being harvested, the fresh leaves have time to mature and wither which makes them easier to process. The leaves are fried until the heat denatures the enzymes that cause oxidation.

After that, the leaves are shaped, fried, and squeezed together along with the buds. Now that the tea leaves are soft, the tea begins to get roasted.

For the final step, after the roasting and shaping, the leaves begin to cool down. The leaves and buds are then consolidated and roasted one more time.
