Glazed Carrots with Lemon – Healthy Meals With Zest

Glazed carrots with lemon is the perfect meal for any veggie lover. The lemons bring out a zest and tang that compliment the carrots. This meal can serve a party of 4 people.

Ingredients:

  • Thickly sliced 1 3/4 pounds of carrots
  • 3 tablespoons of butter
  • 2 chopped pearl onions
  • Strained and grated rind of a 1/2 lemon
  • 1 teaspoon of sesame seeds
  • 1 fresh chopped flat-leaf parsley sprig
  • Olive oil for drizzling
  • Salt and pepper

How to prepare:

First, put the carrots in a bowl, add water to cover and add a pinch of salt, let sit for about 15 minutes and drain.

Begin melting the butter in a pan, add the onions and cook over a low heat, stirring occasionally for 5 minutes.

Add the lemon juice and rind, cook for a few minutes more, then add the carrots and season with salt and pepper, cook for a further 10 minutes. Meanwhile, dry-fry the sesame seeds in a heavy skillet for a few seconds until they give off a scent.

Remove the pan of carrots from the heat and transfer to a warm serving dish. Sprinkle with the parsley and sesame seeds, drizzle with olive oil and then serve!
